My children have always loved meatloaf but they especially love it in smaller portions. When they were little they thought they were eating giant meat balls and that made them so cool. I mix a special topping that makes them extra delicious.
INGREDIENTS for MEATLOAF
1-1/2 to 2 lbs of ground beef
1 cup of almond flour
3 large eggs
3 tbsp minced garlic
1/2 minced onion or 2 tables of dried minced onion
2 tsp Himalayan Salt
2 tsp black pepper
(0ptional) 1 diced green bell pepper
Preheat oven to 350 degrees F.
Mix all ingredients together and to mixed well. Then spoon meat into individual cups. Bake for 25 mins or until completely done throughout, take out and add sauce (recipe below), pop back in the oven for 5 more mins.
The trick is simple dishing the meat out into muffing tins and because I use an old ice-cream scoop, the come out with rounded tops (like a giant meat ball). However you can just back the portions into the cups with a spoon.
INGREDIENTS for Meatloaf Topping
1/2 c sugar free ketchup
1 tbsp mustard
1/2 tbsp Trivia Brown Sugar
