I don't know about my other Keto friends but I have been MISSING APPLES. So, I needed to come up with a recipe that would give me a taste without all the carbs. I was also wanting to taste something sweet. I haven't really had cravings for sweet but a treat every now and then is nice to have but if the recipe is tasty there goes the need to feel as though you should "cheat". That's my philosophy anyway. I'm not "deprived". I am satisfied.
The first time I made 90 sec bread I was a bit disappointed in how flat it fell. It rose all fluffy and then once I popped it out of the microwave....pancake. I have been experimenting with the recipe ever since. I believe this little trick will change how I bake all things keto from now on.
Along this keto way of eating journey there are so many things I have missed it wondered if I'd ever get to have again. So, ocasssionally on a wish and a prayer I get out my mixing bowl and start trying to recreate a family favorite. One of my favorites that I even shied away from when eating lean and clean was sausage balls. Who knew you could enjoy this family favorite and still lose weight?
Taco Tuesday is no joke in my house. For years I have been perfecting my taco-making craft. When we started a ketogenic diet we just eliminated the carb loaded chips and tortillas. I have felt like I was missing something. Something crunchy and textured. So, after much research and Pinterest-ing I have decided to go with taco bowls. It's easy and if you're new to a keto or low carb way of eating you'll find this to be satisfying as well.
I had left over cubed chicken after making my Chick-Fil-A Style Nuggets and I've been dying to try another recipe, keto style.
I typically make my famous grilled nuggets because they are healthier but since starting keto I have made some adjustments to ingredients and now we enjoy some of our favorite foods again. Here is my families new favorite dinner and it's just as food baked or fried.

This gratin will convert those wary-of-green-vegetable eaters to greens lovers. A simple white sauce lightly coats Swiss chard leaves, and a topping of cheese seals the deal. For a different presentation, bake in individual gratin dishes or ramekins (seen above) rather than one large dish. Make up to a day ahead and keep in the fridge until ready to serve.
I had a meaningful conversation Saturday with my neighbor about out health and family members health. I told her we've been doing this thing called keto and she said her doctor recommended a ketogenic diet for her as well.
Low carb and a keto diet are similar but I believe the keto diet has helped us get fast results and feel better then any "diet" before. It's all about increase healthy fats to flush out bad fat and decreasing carbs to make your body use fat as your fuel tank. The protein intake doesn't even change that much from a standard diet. Just remember...increase healthy fats and decrease carbohydrates.
Being that we were just talking about this way of eating and I had a yummy soup in the crock pot I told her I'd send some over so she could taste why this doesn't feel like a diet at all. The food is rich and hearty. A little goes a long way.
Here is my recipe.
Cauliflower has got to be the most versital of veggies I have ever seen. I serve up my fair share of zoodles but this veggie makes for excellent keto recipes. This one is simple.
1 head of Cauliflower
1 one onion sliced
10 cloves of fresh garlic
1 cup of baby carrots
1/4 cup olive oil
1 tbsp of butter
parsley and basil
salt and pepper
My kids and I were craving something sweet on our first cook day in September. I found a similar recipe that definitely was not keto and adapted the recipe so that it would work for us and give us a little treat as we approach fall. Enjoy.

Well, because it doesn't look lemony and the hint of lemon is subtle it cuts the sweetness of the icing.

Sometime in early September of last year my husband got the great idea we should get a bread maker and start making our own bread, we would eat less and eat healthier. He was absolutely correct. I found a Breadman Bread Machine at Goodwill for $9.99 and took a chance on it. I brought it home and started looking for instructions online and recipes that were within the "beginner: anyone can do this" range. Still there were tweaks I had to make but now I can throw all my ingredients in and push a few buttons and before we know it we have fresh baked bread. The yummiest ever!
My mom has had made these cookies from this recipe as far back as I can remember. She remembers her mother making them for her Senior Tea in highschool. The memories of these laid out, by what seemed like the hundreds, on our kitchen table come flooding back as I make these for my babies. We love to gift them to our neighbors in early December to kick of our Christmas celebration. They are delicate and buttery. My favorite version is rolled in chopped pecans. You'll find two different versions below from the same recipe.

I saw a documentary called Food Matters years ago. Every time I watch it something else strikes me as highly beneficial to my family. One of the last things that intrigued me was the statement that our body treats cooked food like a foreign object and if we don't counter balance the cooked with the raw by 50% or better than we have increased inflammation in our bodies. As a former, medication dependent Type 2 diabetic there were lots of things I changed about my diet to aid in the healing; decrease the inflammation and hormone production of insulin. My pancreas was just overworked and tired... Cutting simple carbs and almost all sugar was the first step, taking supplements to give my body back what it was missing and to keep giving it what it needed, and exercising to release healthy endorphins and destress my body made a huge different right away. I am a work in progress but I feel amazing most days and have been medication free for 4 years this month.
What we put in our bodies when it comes to nutrition is more important than exercise and even more important that sleep. So, I'm on a mission to better my family with better nutrition. Today's recipe is simple and super yummy.
People ask me, what if I don't like XYZ or my husband/family won't eat XYZ. You have to retrain your palate and your thinking. If it's better health you are truly after you will train your palate to like more wholesome, home grown, as God intended us to eat foods. Start by ridding your pantry of as much processed food as possible...cereals, chips, snacks, and even canned goods. A little at a time replace them with healthy alternatives.

Cucumber & Tomato Salad
1 cucumber peeled & diced
1/2 sweet onion diced
3 Roma tomatoes diced
Toss all veggies together with 2 tbs of a simple Italian dressing. The best kind have healthy fats like olive oil, vinegar, and herbs only. No additives if possible or make your own.
Chill for 1-2 hours and serve as a side dish or on a bed of greens for a yummy salad. You can also toss them with long grain brown rice or quinoa if you want to incorporate healthy grains.
Oh how I miss my Granny this time of year. I grew up a skip hop away from her back door and planted my own family a door over from her. One thing I miss most are her phone calls to tell me she had food cooked that someone needed to come eat. We would head straight over and sit around her table while she watched us eat. It was always delicious.
I love to cook but only if the meals are healthy, easy, and yummy. .
