It had been a long while since I have cooked roast beef. I found a great deal on a piece of meat that was ample size for our large family. I really should cook this more often, as my kids absolutely loved it and we had left overs for next days sandwiches. It is full of favorite and super easy to make. It put it in the crock pot after the kids went off to school and by dinner we had a feast with a side of buttery green beans and the kids enjoyed some small seasoned potatoes. I truly hope you enjoy this simple and easy recipe with your family as well.
1 packet of dry Italian dressing seasoning
16 oz beef broth
1 lb roast beef
1 onion quartered
10 oz carrots
1 stalk of celery
4 cloves of garlic minced
1/2 cup butter
Start your roast early and set it on slow and low for all day cooking. Place meat into slow cooker and cover with dry seasoning. Pour beef broth around the sides of meat. Place onion, garlic, carrots, and celery around the sides of the meat. Place a stick of butter on top of the meat. Cover and cook 8 hours on low. Cook on high for 6 hours.
To remain keto, limit intake of onions and carrots.
