Calzone's sounded like an excellent meal prep idea and so, I pulled out my mixing bowls, some precooked ground beef, all the ingredients for the dough and extras for the filling and got busy.
Forming Crust: I use parchment paper and a plate to make beautiful circles. You can make these whatever size you like. I go ahead and start dividing my dough once it's ready to insure I get 12 mini circles. Form each divided piece into a ball and place it on an 8" square piece of parchment. Using another 8" square piece, lay it on top of your dough ball and then evenly press the plate down until it is about 1/4" thick.
Below is a screenshot of the macros from Carbmanager using all the ingredients. You can divide the amounts below by the serving size you make. So if you make 6 circles for calzones or 12 for mini pizzas you can figure your macros per serving.
Crust Ingredients | 12 servings:
3 Cups of shredded Mozzarella Cheese
2 Cup of Almond Flour
4 tbsp cream cheese
Pinch of salt
1 tsp of each: oregano, garlic powder, onion powder, and rosemary (all optional)
Your choice of toppings.
Macros per mini calzone and do not include toppings
Fat 17.4 g
Carb 2.8 g
*if you are simply eating low carb and not keto but you would like to decrease your fat intake, simple choose ingredients that are labeled as low fat such as your cheese and cream cheese.
